Roasting:
Barbera roasts all bean varieties within a blend separately, gently and slowly to preserve the characteristic features of the beans. The coffee beans are then rapidly cooled with cold air, instead of water as is usually done. This method of air cooling guarantees that the beans retain their aroma.
